## π¨βπ³ Method
### 1. Batter the chicken
Whisk flour, cornstarch, salt, pepper, egg, sparkling water, and sesame oil until smooth (like thick pancake batter). Toss chicken in batter until fully coated. **Refrigerate at least 30 minutes** β this makes the coating stick and fry crispy.
### 2. Deep fry the chicken
Heat oil to 350Β°F in a Dutch oven or deep pot. Fry chicken in batches, 5β6 minutes until deep golden and cooked through (165Β°F internal). Don't overcrowd. Drain on a wire rack.
### 3. Make the sauce
Heat canola oil in a large wok or skillet over medium-high. Add red pepper flakes, garlic, and ginger β cook 30β60 seconds until fragrant. **Don't walk away or the garlic burns.** Add sugars, rice vinegar, orange juice, soy sauce, and zest. Stir until sugars dissolve and sauce bubbles. Whisk water + cornstarch together, pour into sauce, cook 1β2 minutes until thick and glossy.
### 4. Stir-fry the noodles
Cook chow mein noodles per package (usually boil 3β4 min), drain well. In a hot wok with 2 tbsp oil, add cabbage and carrots, stir-fry 2 minutes. Add noodles, bean sprouts, soy sauce, oyster sauce, sesame oil, and white pepper. Toss vigorously 2 minutes until noodles are browned with crispy bits on the bottom.
### 5. Combine and serve
Add fried chicken to orange sauce, toss until evenly coated. Plate noodles on bottom, top with sauced chicken, garnish with sesame seeds and green onions.

## π‘ Tips
- **Noodles:** Chow mein noodles are egg-based wheat noodles β flat and medium-thick. Thin supermarket egg noodles work as a substitute.
- **Crispy noodles:** Get your wok hot and let some noodles brown against the bottom β that's the takeout secret.
- **Air fryer option:** Skip deep fry, coat chicken in batter, air fry at 375Β°F for 12β15 min flipping halfway. Less crispy, less oil.
- **Sauce too thin?** Simmer longer or add 1 tbsp cornstarch + water slurry. Too thick? Splash in orange juice.
- **Sauce too sweet?** Reduce brown sugar by 1 tbsp, add extra rice vinegar.
- **Extra heat:** Add more red pepper flakes or a spoon of sriracha to the sauce.
